  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and coat with cornstarch.
  3. Heat oil in a large skillet over medium-high heat. Add tofu in a single layer and cook for about 3-4 minutes until golden brown.
  4. Flip tofu and cook another few minutes until browned on all sides; remove from pan.
  5. In the same pan, sauté sliced peppers and onions until caramelized (about five minutes).
  6. Add minced garlic and ginger; stir for about thirty seconds until fragrant.
  7. Toss in pineapple chunks and caramelize for an additional two to three minutes.
  8. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the tofu mixture in the skillet. Stir gently for two minutes until glossy.
