Ingredients

  • Oil (or water for oil-free)
  • Vegan beef or portobello mushrooms
  • Onion
  • Carrots
  • Celery
  • Garlic
  • Flour (or cornstarch)
  • Vegetarian stout substitute (e.g., non-alcoholic beer)
  • Rutabaga/swede
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce (or Tamari)
  • Fresh herbs (thyme and rosemary)

Instructions

  1. In a large pot, heat oil over high heat. Add vegan beef or mushrooms and sear until golden brown. Set aside.
  2. Lower heat to medium; add onion, carrots, and celery into the same pot. Sauté until softened, then stir in garlic.
  3. Add flour and cook for 1-2 minutes until well combined.
  4. Gradually pour in the vegetarian stout while stirring to avoid lumps.
  5. Add rutabaga, potatoes, cabbage, vegetable stock, soy sauce, salt, pepper, sugar, and herbs. Stir well.
  6. Bring to a boil; reduce heat and simmer uncovered for 45-50 minutes until potatoes are tender.
  7. Return seared vegan beef/mushrooms to the pot for the last 10 minutes of cooking.
  8. Serve warm with crusty bread or vegan dumplings.
