  • ½ cup whole milk, room temperature
  • 2 large eggs, room temperature
  • ½ cup sour cream, room temperature
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 2 cups heavy cream, divided
  • 1 tsp vanilla extract
  • 3.5 oz dark chocolate, finely chopped
  • 4.5 oz white chocolate, finely chopped
  • 5 oz milk chocolate, finely chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat oven to 350°F (180°C). Grease and line two 8-inch round cake pans.
  2. In one bowl, mix dry ingredients for the cake; in another bowl whisk wet ingredients. Combine both mixtures and add dissolved espresso in hot water.
  3. Bake for 35 minutes; cool completely.
  4. Prepare the mousse by heating cream with vanilla and tempering egg yolks mixed with sugar and cornstarch. Pour over melted chocolates and fold in whipped cream.
  5. Assemble cake with layers of dark and white chocolate mousse. Chill for at least 4 hours.
  6. Make ganache by heating cream and pouring over chopped chocolate; spread over chilled cake.
  7. Decorate with shavings or fresh berries.
