  • 1 lb sweet potatoes (about 2 medium)
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 1/4 cup evaporated milk

Instructions

  1. Prepare the crust by combining flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough holds together. Chill for at least 30 minutes.
  2. Bake sweet potatoes at 400°F until tender, about 45 minutes. Once cool, scoop flesh into a bowl.
  3. Mix sweet potato flesh with softened butter, dark brown sugar, eggs, spices, evaporated milk, and vanilla until smooth.
  4. Pour filling into the prepared crust. Brush edges with an egg-milk mixture for shine. Bake at 350°F for about 45 minutes or until set but slightly jiggly in the center.
