  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix bread crumbs with onion, celery, carrots, parsley, chicken broth, melted butter, garlic powder, thyme, salt, and pepper.
  3. Gently loosen the skin of each hen and fill them with the stuffing.
  4. Drizzle olive oil over each hen and season with salt and pepper.
  5. Place hens in a roasting pan and baste with white grape or apple juice.
  6. Roast for about 1 hour and 10 minutes until cooked through (internal temperature should reach 165°F/74°C). Let rest before serving.
