  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 3 large eggs (or chia eggs)
  • 1 1/2 cups milk (or plant-based milk)
  • 3/4 cup olive oil
  • 1 tablespoon vanilla extract
  • 1 cup + 2 tablespoons boiling water
  • 24 ounces full-fat cream cheese (room temperature)
  • 1 cup + 2 tablespoons unsalted butter
  • 3 3/4 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • pinch of salt
  • orange gel food coloring
  • 2 cups mini vegan marshmallows
  • Plastic spiders

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together granulated sugar, flour, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs (or chia eggs), milk, oil, and vanilla until combined.
  4. Combine wet and dry ingredients, then carefully stir in boiling water.
  5. Divide batter between pans and bake for about 24 minutes. Let cool completely.
  6. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar along with salt and vanilla.
  7. Frost the top of one layer, stack the second layer on top, frost the sides, then create the spiderweb design using colored frosting or melted vegan marshmallows.
