  • 3.4 ounces pumpkin spice instant pudding mix
  • 1 cup sour cream
  • 4 large eggs
  • 1/2 cup water
  • 1/2 cup oil (canola or vegetable)
  • 1 1/2 cups mini chocolate chips
  • 16 ounces cream cheese (softened)
  • 1/2 cup butter (softened)
  • 1/3 cup dark cocoa
  • 34 cups powdered sugar
  • 2 teaspoons vanilla extract
  • black food coloring
  • 2 red hots

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the spice cake mix, pumpkin spice pudding mix, sour cream, eggs, water, and oil until well combined.
  3. Gently fold in mini chocolate chips.
  4. Pour the batter into a greased bundt pan and bake for 45-50 minutes or until a toothpick comes out clean.
  5. Let cool for 20 minutes before removing from the pan. Refrigerate for 1-2 hours before frosting.
  6. Prepare the frosting by blending softened cream cheese and butter with dark cocoa powder, powdered sugar, and vanilla until smooth. Add black food coloring if desired.
  7. Frost the cooled cake and decorate as desired.
