  • 1 Whole chicken
  • 3 tbsp grapeseed oil
  • 6 tbsp unsalted butter
  • 3 tbsp all-purpose seasoning
  • 1½ tbsp black pepper
  • 2 tbsp smoked paprika
  • 4 thyme sprigs
  • 5 garlic cloves (smashed)
  • 1 onion (sliced into ½" medallions)

Instructions

  1. Prepare the chicken by cleaning it and patting it dry. Using kitchen shears, cut along both sides of the backbone to remove it. Flatten the chicken.
  2. Season both sides of the chicken with grapeseed oil and all-purpose seasoning, massaging for better flavor absorption.
  3. Flip it breast side up, applying more oil and seasoning on top.
  4. Carefully separate the skin from the breasts and place butter pieces underneath for added richness.
  5. Sprinkle thyme leaves over the seasoned chicken and line a cast iron skillet with onion medallions.
  6. Preheat oven to 375°F (190°C) and bake for about 1 hour and 15 minutes, basting every 15 minutes until cooked through.
