  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup almond milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Boil cubed sweet potatoes in salted water until fork-tender (15-20 minutes). Drain and return to the pot.
  2. Mash sweet potatoes with olive oil, almond milk, vanilla extract, cinnamon, and nutmeg until smooth.
  3. In a separate bowl, mix brown sugar, maple syrup, cinnamon, nutmeg, allspice, raisins, vegan marshmallows, and pecans.
  4. Preheat oven to 350°F (175°C). Spread mashed sweet potatoes in a greased baking dish and top with the mixture.
  5. Bake for 40-50 minutes until bubbly and golden brown.
