  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper.
  3. In a stand mixer or using a hand mixer, cream the butter until smooth. Add brown sugar, molasses, and pumpkin puree; mix until combined.
  4. Beat in the egg until fully incorporated.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Chill the dough for at least 30 minutes.
  7. Shape dough into balls, roll in sugar, place on prepared sheets, and flatten slightly before baking.
