  • 1 white onion, finely chopped
  • 16 ounces high-quality cheddar cheese (shredded; divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Grate the zucchini and drain it well to remove excess moisture.
  3. In a skillet over medium heat, sauté the chopped onion and jalapeño until soft.
  4. In a large bowl, combine the drained zucchini, sautéed mixture, half of the cheddar cheese, corn kernels, eggs, garlic powder, cumin, salt, pepper, and corn muffin mix. Mix until well combined.
  5. Pour the mixture into the prepared baking dish and top with remaining cheddar cheese.
  6. Bake for about 50 minutes or until golden brown on top. Let cool slightly before serving.
