  • ½ pound ground chicken sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt
  • Black pepper

Instructions

  1. Preheat oven to 400°F. Halve the acorn squash and scoop out seeds. Place cut side down on a lined baking sheet.
  2. Bake for 20 minutes until fork-tender.
  3. In a skillet over medium heat, cook the ground chicken sausage until browned; set aside.
  4. In the same skillet, sauté onions in olive oil until softened. Add kale, garlic, celery, apples, and herbs; cook until vegetables are tender.
  5. Mix in cooked sausage and some scooped squash flesh; adjust seasoning.
  6. Fill each squash half with the mixture and return to the oven for another 15 minutes.
  7. Top with chopped nuts and bake for an additional 5 minutes before serving.
