  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1 cup fresh basil (roughly chopped)
  • 2 cups chicken stock
  • 2/3 cup coconut cream

Instructions

  1. Preheat the oven to 375°F.
  2. Arrange sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for about one hour.
  3. In a large pot, heat olive oil over medium heat. Sauté diced onion for five minutes until soft.
  4. Add minced garlic, thyme, salt, and pepper; sauté for one more minute.
  5. Stir in crushed San Marzano tomatoes, chopped basil, and sugar; let simmer for ten minutes.
  6. Incorporate roasted tomatoes and chicken stock; simmer for thirty minutes.
  7. Blend until smooth using an immersion blender or regular blender.
  8. Stir in coconut cream before serving.
