  • 2 tablespoons olive oil
  • 1 medium brown onion, chopped
  • 2 celery stalks, chopped
  • 3 medium carrots, sliced
  • 350g button chestnut mushrooms, halved
  • 3/4 tablespoon fresh rosemary, chopped
  • 1/2 tablespoon fresh thyme leaves
  • 2 garlic cloves, minced
  • 1 heaping tablespoon tomato paste
  • 35g plain flour
  • 160 ml apple vinegar
  • 800 ml vegetable stock
  • 2 medium parsnips, peeled and uniformly sliced
  • 250g swede, peeled and chopped into chunks
  • 2 dried bay leaves
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent.
  2. Add celery and carrots; cook for about five minutes until softened. Stir in mushrooms, rosemary, thyme, garlic, tomato paste, and soy sauce.
  3. Sprinkle flour into the pot while stirring to avoid lumps. Slowly pour in apple vinegar.
  4. Pour in vegetable stock along with parsnips, swede chunks, bay leaves, salt, and pepper. Bring to a boil before reducing heat to simmer for about 45 minutes.
  5. Taste and adjust seasoning as necessary before serving.
