  • 1/2 cup + 2 tbsp brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree, blotted
  • 1 egg yolk
  • 1 tsp pumpkin pie spice
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 cups white chocolate chips

Instructions

  1. Preheat oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. Blot the pumpkin puree to remove excess moisture.
  3. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in the blotted pumpkin puree, egg yolk, and pumpkin pie spice until well combined.
  5. Gently fold in flour and baking soda until just mixed.
  6. Stir in white chocolate chips evenly throughout the dough.
  7. Scoop balls of dough onto the prepared baking sheet, spacing them about two inches apart.
  8. Bake for 9 to 11 minutes until edges are set and centers are slightly gooey.
