  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (approx.)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a small springform pan.
  2. In a large bowl, beat together eggs and brown sugar until frothy. Stir in coconut oil, pumpkin puree, vanilla extract, and optional maple syrup until well combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold dry ingredients into the wet mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes uncovered. Then cover loosely with foil and bake for an additional 20 minutes or until a toothpick comes out clean with moist crumbs.
  5. While cooling on a wire rack, prepare the glaze by mixing powdered sugar with milk and maple syrup until smooth.
  6. Once cooled, drizzle the glaze over the kuchen and let it set before slicing.
