  • 2 double shots of blonde espresso
  • 12 cups ice cubes
  • Cold oat milk, to taste
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1 ½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • ½ tsp maple extract (optional)

Instructions

  1. In a saucepan, whisk together brown sugar, pumpkin puree, and warm water. Simmer on low heat for 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla and maple extracts.
  3. Store syrup in an airtight container in the fridge.
  4. In a sealable jar, combine one double shot of espresso with two tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
  5. Pour into a glass without ice from the jar, add fresh ice cubes, and top with oat milk.
  6. Dust with pumpkin pie spice before serving.
