  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • Mini vegan marshmallows for topping
  • Crushed graham crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in pumpkin puree, egg, and vanilla extract until smooth.
  4. Combine dry ingredients: flour, baking soda, pumpkin pie spice, and salt in a separate bowl.
  5. Gradually add dry mixture to wet ingredients; mix until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons onto a baking sheet; space them apart.
  8. Top each dough ball with extra marshmallows and chocolate if desired.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  10. Cool slightly on baking sheet before transferring to wire rack.
