  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted (or coconut oil for dairy-free)
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 cups pumpkin puree
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
  3. Press two-thirds of the crumble mixture into the bottom of the baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, and pumpkin pie spice until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Sprinkle remaining crumble mixture on top and add optional walnuts if desired.
  7. Bake for 30-35 minutes until golden brown. Let cool completely before slicing.
