  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. If using mini pumpkins, cut off the tops and scoop out the seeds; if using ramekins, ensure they are ready for filling.
  3. In a saucepan over medium heat, combine heavy cream, granulated sugar, and salt; stir until sugar dissolves.
  4. In a bowl, whisk egg yolks; slowly add warm cream mixture while whisking continuously.
  5. Fold in pumpkin puree, vanilla extract, ground cinnamon, and ground ginger until smooth.
  6. Pour the custard into prepared pumpkins or ramekins and place them in a baking dish filled with hot water.
  7. Bake for about 30 minutes until just set but still slightly wobbly in the center.
  8. Allow to cool slightly before refrigerating for at least two hours (or overnight).
  9. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
