  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners' sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, beat room-temperature butter with granulated and brown sugars until light and fluffy. Mix in pumpkin puree, egg, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture without overmixing.
  5. Scoop tablespoon-sized dough onto a prepared baking sheet, spacing them two inches apart.
  6. Bake for 13 to 15 minutes until edges are set but centers remain soft. Cool on a wire rack.
  7. For frosting, beat softened cream cheese and butter until smooth; mix in vanilla and sifted confectioners' sugar.
  8. Frost cooled cookies generously and sprinkle with cinnamon if desired.
