  • 2 1/2 tsp pumpkin pie spice

  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all purpose flour, spooned and leveled
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla extract
  • 1 cup powdered sugar
  • 24 tsp whole milk

Instructions

  1. Cream together softened unsalted butter and brown sugar until fluffy.
  2. In a separate bowl, whisk all-purpose flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. Combine canned pumpkin puree with egg yolks and vanilla extract in another bowl.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Prepare the streusel by mixing brown sugar, flour, and melted butter until crumbly.
  6. Scoop dough onto a lined baking sheet; top each cookie with streusel before baking at 350°F (175°C) for about 11 minutes.
  7. Once cooled slightly, drizzle icing made from powdered sugar and milk over each cookie.
