  • ⅓ cup pure maple syrup or honey
  • ¼ cup unsalted butter or coconut oil, melted
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F and grease a baking dish.
  2. In a large bowl, mix together rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, milk, eggs, maple syrup (or honey), melted butter (or coconut oil), and vanilla extract until well mixed.
  4. Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  5. Transfer the batter into the greased baking dish and sprinkle with additional pecans if desired.
  6. Bake for approximately 30-34 minutes until the center is set and a toothpick comes out clean.
