  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup + 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups all purpose flour
  • 1 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix pumpkin puree, egg (or applesauce), sugars, canola oil, vanilla, and cinnamon until well combined.
  3. In another bowl, whisk together salt, baking soda, baking powder, and flour.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Stir in chocolate chips evenly.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, about 12 cookies per sheet.
  7. Bake for 10-13 minutes until lightly golden around the edges. Cool on a wire rack before serving.
