  • 1 lb cremini mushrooms, sliced
  • 1/2 teaspoon salt
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup apple juice or apple vinegar
  • 5 tablespoons flour (or gluten-free flour)
  • 3 cups hot vegetable broth
  • 1/2 cup to 1 cup sour cream or vegan sour cream

Instructions

  1. In a large pot over medium-high heat, heat olive oil or vegan butter. Sauté diced onion until golden (3-4 minutes), then add chopped garlic and sauté for another 2 minutes.
  2. Add sliced mushrooms, salt, and rosemary to the pot, cooking until mushrooms are tender and liquid has evaporated (10-12 minutes). Pour in apple juice or vinegar to enhance flavors.
  3. Sprinkle flour over the mixture, stirring constantly for 1-2 minutes. Gradually mix in hot vegetable broth, stirring well until combined. Let simmer until thickened.
