  • 1 lb boneless, skinless chicken breast
  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chicken broth

Instructions

  1. Cook spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika; cook for 6-7 minutes on each side until golden brown. Remove from skillet and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes.
  4. Add chicken broth; bring to a simmer. Stir in heavy cream and let it thicken for a couple of minutes.
  5. Reduce heat to low; mix in shredded Monterey Jack cheese and grated Parmesan until melted.
  6. Toss the cooked spaghetti with the sauce, then top with sliced chicken and sprinkle with parsley.
