1 pound sirloin steak
3 tablespoons olive oil
2 cups cooked brown rice, quinoa, or cauliflower rice
1 cup cherry tomatoes, halved
1 cucumber, diced
1 cup plain Greek yogurt (or coconut yogurt)
¼ cup fresh parsley or dill
½ teaspoon dried oregano
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper
1 cup roasted chickpeas (omit for strict keto or paleo)
½ red onion, thinly sliced
½ cup kalamata olives, pitted
â…“ cup crumbled feta cheese (omit for dairy-free)
1 tablespoon fresh dill, chopped
Salt and pepper, to taste
2 tablespoons fresh lemon juice
1 teaspoon honey (omit for strict keto or Whole30)
1 small clove garlic, minced
Instructions
In a bowl, whisk together olive oil, minced garlic, fresh lemon juice, oregano, thyme, salt, and pepper. Marinate the steak for at least 30 minutes.
Heat a grill or skillet over medium-high heat and cook the steak for about 4–5 minutes on each side until medium-rare. Let it rest before slicing.
For the tzatziki sauce, combine Greek yogurt (or coconut yogurt), grated cucumber (excess water squeezed out), lemon juice, minced garlic, chopped dill, salt, and pepper in a bowl. Mix well.
Assemble the bowls by placing your choice of base (brown rice or quinoa) in serving bowls. Top with sliced steak, cherry tomatoes, cucumber, herbs, and drizzle with tzatziki.
