  • 2 tbsp olive oil
  • 1 onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 4 ripe tomatoes (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in garlic and spices (cumin, paprika, smoked paprika if using, turmeric) and cook for about a minute until fragrant.
  3. Add chopped tomatoes and tomato paste; simmer for about 5 minutes until softened.
  4. Mix in canned and dry beans along with vegetable broth. If using an Instant Pot, switch to pressure mode; otherwise, cover and simmer until dry beans are tender (about 20 minutes).
  5. Season with salt and black pepper to taste before serving hot.
