  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • juice of 1 lemon
  • 1 teaspoon zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • salt and pepper (for seasoning the chicken)
  • additional Parmesan cheese for garnish
  • thinly sliced lemon for garnish

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown and cooked through. Remove from the pan.
  3. In the same pan, sauté minced garlic until fragrant, then add chicken broth, lemon juice, and zest; bring to a boil.
  4. Lower heat and stir in the heavy cream, simmering for about 5 minutes before adding Parmesan cheese until melted.
  5. Add spinach until wilted, return chicken to the pan, and spoon sauce over it. Cover and let meld for a couple more minutes before serving.
