  • ¼ cup granulated sugar
  • ½ cup cold unsalted butter, cubed
  • 1 egg yolk
  • 1½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • ¼ cup cornstarch
  • Zest and juice of 1 lemon

Instructions

  1. For the crust, combine flour, sugar, and salt in a bowl. Cut in the cold butter until crumbly. Mix in the egg yolk and enough cold water to form a dough. Chill for 20-30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out the chilled dough and place it in a tart pan. Prick with a fork and pre-bake for 12-15 minutes until lightly golden.
  3. For the filling, whisk together sugar, cornstarch, lemon zest, and egg yolks in a saucepan. Gradually add milk while whisking continuously. Cook over medium heat until thickened, then stir in lemon juice, butter, and vanilla.
  4. Pour filling into the pre-baked crust and bake for an additional 25-30 minutes until set but slightly jiggly in the center. Cool completely before slicing.
