  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a pot over medium-high heat. Season chicken breast with lemon pepper and sear until golden brown.
  2. Remove chicken and deglaze the pot with white grape juice until reduced by half. Add butter, onion, carrots, and celery; soften for 5 minutes.
  3. Stir in minced garlic and seasonings; cook for an additional minute.
  4. Pour in chicken broth and return the chicken to the pot. Simmer gently until cooked through.
  5. Cook orzo separately according to package instructions to prevent mushiness.
  6. Lower heat and stir in heavy cream and Parmesan cheese until smooth.
  7. Add spinach and lemon juice; let spinach wilt for 2–3 minutes.
  8. Serve by placing orzo in bowls first, then ladle soup on top.
