  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • ¼ cup mayonnaise
  • Honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon lime juice
  • ½ teaspoon garlic powder
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. In a large bowl, combine ground beef (or chicken), panko breadcrumbs, egg, minced garlic, soy sauce, gochujang, salt, black pepper, and chopped green onions. Mix gently until just combined.
  2. Form the mixture into meatballs about 1 to 1.5 inches in diameter.
  3. Bake the meatballs in a preheated oven at 400°F (200°C) for approximately 25 minutes or pan-fry until browned on all sides.
  4. For the glaze, whisk together soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, minced garlic, minced ginger, and cornstarch mixed with water.
  5. In another bowl, mix mayonnaise with gochujang, lime juice, honey, and garlic powder to prepare the spicy mayo dip.
