  • 1 (16 ounce) package gnocchi (optional)
  • Olive or avocado oil
  • 2 links spicy Italian sausage (or plant-based alternative)
  • 2 leeks (white part only), thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1 (28 ounce) can whole tomatoes, roughly chopped
  • 1 (15 ounce) can navy beans, drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • 1 tablespoon chopped flat-leaf parsley
  • Squeeze of lemon juice

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large pot over medium-high heat, drizzle olive oil and brown the spicy sausage for a few minutes.
  3. Add leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until veggies are tender.
  4. Stir in garlic and let it sauté briefly before adding tomatoes and navy beans.
  5. Pour in chicken stock or broth; stir well and cover to simmer for about 20 minutes.
  6. Before serving, stir in kale, parsley, and lemon juice. Serve hot over gnocchi if desired.
