  • 8 chicken thighs
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the dry rub ingredients: thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper.
  3. Coat each chicken thigh with the dry rub.
  4. In a large oven-safe pan, sear the chicken thighs until browned on both sides.
  5. Sauté chopped cabbage in the remaining fat until slightly wilted.
  6. Add sliced potatoes and onions along with chicken stock; mix well.
  7. Arrange seared chicken on top of vegetable mixture and bake for 45–50 minutes or until chicken reaches 165°F (75°C).
