  • 1 lb ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup soy sauce
  • 1/3 cup honey
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 cup diced bell peppers
  • 2 cloves garlic

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, pepper, and salt until combined. Form small meatballs.
  3. Sear meatballs in a skillet for a few minutes until browned but not fully cooked.
  4. In a saucepan, combine honey, soy sauce, ketchup, water, and minced garlic; cook until bubbly. Optionally thicken with cornstarch.
  5. In the baking dish, layer uncooked rice and veggies; add broth and stir gently. Nestle the meatballs on top and pour the sauce over everything.
  6. Cover with foil and bake for 40 minutes; remove foil and bake for an additional 10–15 minutes until cooked through.
