  • 1 Tbsp. olive oil
  • 1 medium yellow onion, diced
  • 4 tsp. garlic, minced
  • 1 lb. ground turkey
  • 2 Tbsp. chili powder
  • 4 cups beef broth (or vegetable broth)
  • 28 oz. can fire roasted crushed tomatoes
  • 15 oz. can kidney beans, rinsed and drained
  • 15 oz. can black beans, rinsed and drained
  • 15 oz. can pinto beans, rinsed and drained

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onions and minced garlic until softened (3-4 minutes).
  2. Add ground turkey and cook until crumbled and browned (5-7 minutes).
  3. Stir in chili powder, tomato paste, salt, pepper, and broth; add crushed tomatoes and beans.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for about 30 minutes.
