  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt, optional

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Stir until well combined. Fold in chocolate chips.
  2. Line a cutting board or large plate with parchment paper. Transfer the cookie dough mixture onto the parchment and flatten it into a half-inch thick layer using a spatula or your hands.
  3. In a microwave-safe bowl, melt the remaining chocolate chips with coconut oil in 30-second intervals until smooth.
  4. Pour the melted chocolate over the flattened cookie dough layer and spread evenly. Optionally sprinkle flaky sea salt on top.
  5. Chill in the freezer for about ten minutes until set, then cut into pieces and enjoy!
