  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 clove garlic, minced
  • 1 egg
  • 1 cup orzo pasta
  • 2 cups vegetable broth (or water)
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese (or alternative), parsley, oregano, garlic, egg, salt, and pepper; mix until just combined.
