  • 900g cauliflower florets
  • 240ml low-sodium chicken broth
  • 5g salt (plus to taste)
  • 42g unsalted butter (cubed)
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)

Instructions

  1. In a wide pot, bring the chicken broth and salt to a boil.
  2. Add the cauliflower florets, reduce heat to low, cover, and steam for about 20 minutes until fork-tender.
  3. Transfer the steamed cauliflower to a food processor, reserving the broth.
  4. In the same pot, whisk cubed butter into three tablespoons of hot broth until smooth.
  5. Pour the butter mixture over the cauliflower in the processor, add thyme and black pepper, then blend until completely smooth. Adjust consistency with more warm broth if needed.
  6. Serve warm as an elegant side dish.
