  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries (for jam)
  • 1 tablespoon granulated sugar (for jam)
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries (for topping)

Instructions

  1. Prepare Pâte Sucrée dough and cut into 12 portions. Press into tartlet pans and freeze for 15-30 minutes.
  2. Preheat oven to 375°F. Bake tartlet shells for 10-15 minutes until golden brown and cool completely.
  3. For strawberry jam, cook chopped strawberries with sugar over medium heat for about 5 minutes, then simmer until thickened for about 20 minutes.
  4. For pastry cream, mix sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks with cornstarch and temper them before adding back to heat until thickened.
  5. Chill pastry cream for about two hours.
  6. Assemble by layering strawberry jam at the bottom of each tart shell, piping the chilled pastry cream on top, and finishing with halved strawberries.
