  • ½ cup feta cheese, crumbled
  • ⅓ cup dried cranberries
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine chickpeas, crumbled feta cheese, dried cranberries, red onion, and parsley.
