  • 1 1/2 lbs Yukon Gold potatoes (diced)
  • 1 lb ground turkey sausage
  • 5 cups chicken stock
  • 1 cup coconut milk (or heavy cream)
  • 2 cups chopped fresh kale
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large stockpot over medium-high heat, cook the ground turkey sausage until browned. Break it into small pieces while cooking.
  2. Remove the cooked sausage from the pot, reserving 1 tablespoon of grease. Sauté onions in the grease for about 5 minutes until softened; then add minced garlic and cook for an additional minute.
  3. Add diced potatoes and chicken stock back into the pot with the sautéed onions and garlic. Bring to a simmer.
  4. Lower heat to medium-low and let simmer for approximately 10 minutes until potatoes are tender.
  5. Stir in chopped kale and coconut milk (or heavy cream), simmering for another 5 minutes. Season with salt and pepper to taste.
  6. Serve warm, garnished with crumbled bacon bits if desired.
