  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce or soy sauce for a substitute
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Combine all ingredients in your slow cooker: chicken breasts, chicken broth, coconut milk, red curry paste, fish sauce, diced onion, minced garlic, and sliced red bell pepper.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  3. Remove the chicken and shred it using two forks before returning it to the pot.
  4. Stir in the lime juice just before serving and garnish with fresh cilantro.
