  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or plant-based cream for vegan option)
  • 2 cups organic vegetable stock
  • 4 Tbsps tomato paste, organic
  • Seasonings: sea salt, On Everything All-Purpose Blend, smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Arrange tomato wedges and halved garlic bulbs on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for 30-35 minutes.
  2. In a large pot, sauté the chopped onion over medium heat until translucent (about 5 minutes).
  3. Add roasted tomatoes and garlic to the pot along with vegetable stock, tomato paste, seasonings, and simmer for 10 minutes.
  4. Stir in heavy cream (or plant-based alternative) until combined. Blend for a smooth texture if desired.
  5. Adjust seasoning and serve hot alongside grilled cheese sandwiches.
