  • 15.5 oz black-eyed peas
  • 15 oz sweet corn
  • 1 cup fresh cilantro
  • ½ cup red bell pepper
  • ½ cup orange bell pepper
  • ½ cup red onion
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Start by draining and rinsing the black beans, black-eyed peas, and sweet corn.
  2. In a large bowl, combine the prepared beans and corn with chopped cilantro, diced red and orange bell peppers, and diced red onion.
  3. In a separate bowl, whisk together chili powder, kosher salt, granulated sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently until everything is evenly coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
