  • 2 lbs steak (ribeye, sirloin, or flank)
  • Salt & pepper, to taste
  • 1 tbsp olive oil
  • Slider buns or mini brioche rolls
  • ½ cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Dijon mustard
  • ½ tsp red pepper flakes
  • 1 tsp lemon juice
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional toppings: cheese slices, sautéed onions, arugula, pickles

Instructions

  1. Make the cowboy butter by mixing melted butter with garlic, parsley, Dijon mustard, red pepper flakes, lemon juice, paprika, salt, and black pepper in a small bowl.
  2. Pat the steak dry and season it with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for about 3–4 minutes on each side for medium-rare doneness. Let it rest before slicing thinly against the grain.
  3. Toast slider buns cut-side down in the same skillet until golden brown.
  4. Assemble sliders by layering sliced steak on the bottom bun and adding cowboy butter and desired toppings before finishing with the top bun.
