- 1/4 cup brown sugar
- 1/2 cup pure canned pumpkin
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- Cinnamon sugar for topping
- Preheat your oven to 350°F (175°C) and prepare mini loaf pans by greasing and lining them with parchment paper.
- In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin puree, canola oil, and vanilla until smooth.
