  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini loaf pans by greasing and lining them with parchment paper.
  2. In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin puree, canola oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet mixture and gently fold until combined.
  4. Divide the batter among the prepared pans and sprinkle generously with cinnamon sugar. Swirl it into the batter using a toothpick.
  5. Bake for about 28-30 minutes or until a toothpick comes out mostly clean. Let cool in pans for 10 minutes before transferring to wire racks.
