  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare baking sheets.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until fluffy. Mix in eggs and vanilla until combined.
  3. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually combine with wet ingredients until just mixed. Chill dough for one hour.
  4. For the filling, blend softened butter, brown sugar, cinnamon, and cake flour until smooth.
  5. Scoop out chilled dough (¼ cup), divide it in half, place filling in one half, cover with the other half and seal edges.
  6. Bake for 11-13 minutes until set but soft in the center. Allow to cool before glazing.
