  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches (pitted, thinly sliced)
  • Fresh parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade. Reserve half for later.
  2. Marinate salmon fillets in the other half of the marinade for at least 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Heat oil in an oven-safe skillet over medium-high heat and sear salmon skin-side up for about 2-3 minutes until golden brown.
  5. Flip the salmon, add sliced peaches around it, then pour reserved marinade over everything.
  6. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F (63°C).
  7. Garnish with parsley and serve immediately.
