  • 2 1/2 cups peeled and sliced peaches
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar (¼ cup), and flour (¼ cup). Toss gently and let sit.
  3. In another bowl, mix remaining flour (½ cup), oats, brown sugar, granulated sugar (¼ cup), salt, and cinnamon. Add cold diced butter and mix until crumbly.
  4. Pour fruit mixture into a baking dish and sprinkle crumble topping evenly over the top.
  5. Bake for 40-45 minutes until golden brown and bubbly. Let cool slightly before serving.
